apple cinnamon baked oatmeal - a recipe




This baked oatmeal dish has become a breakfast favorite at my house.
I love it because it can be prepared the night before and then heated as needed.  And it's so tasty!
It can also last for up to a week in the fridge, if it doesn't get gobbled up before then!!

Apple Cinnamon Baked Oatmeal
4c  rolled oats
2tsp baking powder
1/2tsp sea salt
4c diced apples
1c liquid egg whites or 8 egg whites
4c unsweetened almond milk
2tsp vanilla essence
2tsp ground cinnamon
2/3c xylitol

Grease and line a large casserole dish.
Preheat oven 160degC.
In a large bowl, add all ingredients and stir until combined.
Pour into casserole dish and bake for 1 1/2 hours or until set and slightly browned around the edges.

Makes approx 12, 1 cup serves.

Serve with a dollop of 0% Greek yoghurt, sweetened with your favorite plan approved sweetener.
I use pure stevia drops or stevia blend.

This recipe works just as well with carton liquid egg whites as with whole eggs separated.  The only thing with using fresh eggs for the whites, is what to do with all the yolks?  There is only so much mayonnaise and lemon curd I can make!  I have come up with another recipe to use all the yolks left over from this baked oatmeal, Lemon Pudding.  Click through and give it a try.

  3. Yes, this does take one and a half hours to bake. The temperature is 160 deg C and it is a dense cake so it takes long, slow cooking to bake through.
